Southern California, and founded Zest Catering in San Diego. In 2001, he received his Gran Diplome from Le Cordon Bleu in Paris, France. After spending several years in Manhattan as a restaurateur, caterer, and event planner, Chef Roberto accepted the position of Executive Chef and Food & Beverage Manager at Querencia, an exclusive private residential golf resort in Los Cabos. Voilá Bistro & Catering was founded in 2003.
